Brü Coffeeworks

Brü Coffeeworks is a small batch roastery on West Lawrence Avenue in Albany Park, run by owner and roaster Cory Creighton, who turned a roasting hobby that began in 2004 into a business. Coffee is roasted in a traditional drum roaster, and the process puts less weight on roasting temperature and more on the old practice of trusting sight, smell and sound.
The focus is seasonal single origin coffees from around the world, bought through importers that deal in direct trade and fair trade practices and roasted to order. The stated priority is to caramelize the natural sugars of the bean so the cup is never bitter. The roastery is on Lawrence Avenue, in the Ravenswood Manor part of Albany Park, and it is open from eight in the morning until two in the afternoon every day.
