Cuervo began in 2017 when two musician friends, Pablo Tokatlian and Agustín Caro, sold their music gear and opened a café, and the Chacarita corner is where the project grew its own roastery. Since January 2021 Cuervo has roasted its own beans here, in a former car mechanic's workshop on an L shaped corner lot that the Mutar studio opened up into one tall, undivided room, so the roaster and the bar share the same air.

The menu keeps pace with international trends, from piccolo lattes to a dirty chai, and filter coffee comes through V60, Chemex and Clever with lots from Colombia, Rwanda and Guatemala. Flat whites are the house favourite, there are avocado smash plates, cheese scones and vegan or gluten free loaves alongside, and the street corner around it has become a gathering point for Chacarita's design and music crowd.
