NOMONYM Coffee Roastery

NOMONYM roasts on site at its Vitan showroom and changes the origin running through the grinder daily, a rotation that has included washed Kenyan SL28 and SL34, natural Ethiopian Sidama, and rarer nitrogen carbonic maceration and thermal shock lots from Colombia. Andrei, the roaster behind the operation, works directly with the beans from sourcing through roasting, and the shop's own site walks through that chain from green coffee selection to the final cup rather than treating roasting as a back room detail.

The space is built around the coffee rather than around lingering, the shop's own Instagram bio states plainly that there is no wifi and it is not set up as a laptop spot, sugarless too, so it reads as a serious tasting counter for pour over and rotating origins rather than an all day cafe. Beans are sold by the bag both in the showroom and through the website, split between a standard specialty range and a smaller exotic selection of rarer lots.
