Guido

Guido runs as a fully transparent roastery cafe, built so customers can watch the whole process from green bean to finished cup rather than just the counter service. The shop was founded by Adrian Simion, who came from a business background, and Floriana Vlaicu, Romania's first World Coffee in Good Spirits Championship finalist, a pairing that shows in a program built entirely around single origin coffee.

Filter runs through V60 and AeroPress alongside the espresso program, and the shop roasts its own beans across three lines it calls CORE, EXPLORE, and VISION, sold both by the cup and by the bag alongside wholesale and barista training. Public cuppings run on a regular schedule, open to anyone who wants to taste through what's currently in rotation.
