Loïc picked up roasting from his father and a stretch working for a coffee trading company before he and Charly opened Belga & Co in 2016, this Bailli address their first shop and one of the earlier specialty openings in Brussels generally. Their stated view of the whole thing is disarmingly simple, coffee as a moment where the daily routine suddenly freezes rather than just a drink to get through, and the Châtelain room is built around giving people somewhere to actually sit in that pause.

Beans are roasted weekly at their own facility in Antwerp and sold both by the cup and in bags at the counter here. The Bailli neighborhood itself, tucked into Ixelles just off the square, has become one of Brussels's more reliable pockets for a good coffee stop.
