Wilco Dees roasts every bag sold here on site, buying green coffee directly from farmers rather than through a broker chain and building the list around traceable, responsibly sourced lots. The bar and roastery run out of the same room on Hoogstraat, a setup that lets him keep a changing lineup of light roast, fruit forward coffees on hand alongside gentler, more familiar profiles for anyone who just wants a good cappuccino.

A short walk south of the Markt, the shop sits on a quieter stretch of the old town than the streets around the belfry get. Bags go home with regulars about as often as cups get poured on site, and the shop keeps steady weekday hours with a slightly later start on weekends, built more for a neighborhood crowd than for a passing tourist crowd.
