La Pelle Café

Carlos Pereira grew up around coffee farms in Brazil before moving to Paris, where he helped start the roastery Coutume. He opened La Pelle Café in the Chartrons district in January 2016 with Paola, an Italian partner from Turin, roasting beans on a Loring machine set right by the entrance so the process is visible from the street.

The bean list runs through Uganda, Ethiopia, Costa Rica, Honduras and Colombia alongside lots from Pereira's native Brazil, each scored above 85 on the specialty coffee scale before it goes into the roaster. Paola runs the food side, a breakfast and lunch menu with a light Asian inflection alongside chocolate cake and other baked goods, and the room spreads across a bar, a back room and a terrace for anyone who wants to sit with a flat white for a while.
