Forno Brisa Galliera

The Forno Brisa entrance under a stone arch on the arcades of Via Galliera, with a red awning lettered Forno Brisa, a lit doorway onto the timber fronted counter and a cut out figure standing by the door

Forno Brisa began here on Via Galliera in December 2015, a bakery opened by Pasquale Polito and Davide Sarti after the two trained together as master bakers in Pollenzo. It remains the home of Brisa Coffee Roasters, and the roaster turns in full view of the counter, so anyone ordering at the bar can watch the day's coffee being roasted.

The team buys green coffee from farms that avoid field chemicals, pays above commodity prices and favours medium roasts that keep the aroma of each lot intact. Espresso sits alongside filter coffee made with V60, Chemex, Kalita and AeroPress, served next to the sourdough loaves and pastries baked for the shop. The room is open every day, with a pause on Tuesday afternoons.
