Forno Brisa Spaccio e Lab

Two staff at the counter of the Forno Brisa Spaccio e Lab holding up a large sourdough loaf and two bags of Brisa Coffee Roasters beans in front of shelves of country loaves and brewing gear under a painted wheat field mural

Forno Brisa Spaccio e Lab is the bakery's outlet in Bolognina, about two minutes on foot from the railway station and close to the bakery's two production labs, in the Bolognina district just north of the historic centre. Inside, a mural of coffee plants climbs the wall above a row of wooden tables, with a counter of pizza by the slice, bread and pastries along one side.

The shop sells the previous day's bread at a lower price, along with pastry offcuts and the pastries known as brutti ma buoni, so very little goes to waste. Brisa's own coffee is served here too, along with pizza by the slice and wine, and the room opens every day, pausing for an hour on Wednesday afternoons.
