Carl Eugen Johannessen, who spent years working on a documentary about coffee before starting a roastery of his own, founded Bergen Kaffebrenneri as the city's first coffee roaster, running small batch loads through a 30 kilogram Giesen alongside chief roaster Kenneth Rasmussen. The pair are known locally for roasting more by sound and appearance than by strict data, a feel built up over years rather than pulled from software.

The roastery runs out of a converted building on the old Mjellem and Karlsen shipyard grounds in Møhlenpris, an industrial address with room for an outdoor patio and a menu that runs past coffee into pizza, soup, and sandwiches. Public cuppings and roasting courses run alongside daily service, open to anyone curious about what happens to the beans before they reach a cup.
