Ana Elisa Saldanha, a food engineer who studied gastronomy at Ferrandi in Paris, opened this roastery toward the end of the pandemic in 2021 after deciding to build a business specifically around coffee. She works directly with ten producers, seven of them in Minas Gerais and the rest in regions including Bahia's Chapada Diamantina and Espirito Santo, with every lot reclassified in house before it goes into the roaster.

The shop has since grown to two or three units around Savassi and the Avenida do Contorno, all built on the same terroir driven, single origin approach, sold both by the cup and by the bag with packaging designed to hold the coffee's quality after roasting.
