Mike McKim started Cuvée in 1998 as a part time hobby roasting coffee out of a Dallas warehouse before relocating the operation to Austin, and the company is widely credited as an early pioneer of Texas specialty coffee. Cuvée invented canned Nitro Cold Brew under its Black and Blue label, first served publicly at a 2012 Slow Food Austin event and later the first canned nitro product to reach the wider market.

This ground floor cafe inside the Natiivo tower on Rainey Street doubles as a full bar, pouring cocktails, wine and beer alongside the coffee program once the sun goes down. By day it reads as a laptop friendly espresso counter; by night the same room turns into one of Rainey Street's coffee adjacent bars.
