Civil Goat Coffee Guadalupe

The bright, high ceilinged room at Civil Goat Guadalupe with a wooden counter, a row of stools at the window bar and copper pendant lamps

Civil Goat Coffee began in Austin's Cuernavaca neighborhood, where founder Chris O'Brien, who had been roasting for himself since 2010, opened a shop and roastery in late 2016. The company has since grown to four Austin shops, and each keeps its own personality, with the Guadalupe shop serving the neighborhood just north of the university campus.

The menu is small and carefully made, built around espresso, cortados, filter coffee and nitro cold brew, with tea alongside. The roastery sells its coffees as bags and through subscriptions, with house names such as Cuernavaca, Ocotillo, Caliche and Terco, and the shops are watched over by Butters, the company's goat mascot, who the brand calls its least productive employee. The Guadalupe shop is open every day from eight in the morning until four.
