Yiannis Taloumis had already spent years importing and roasting traditional Greek coffee when he opened TAF as a sit down cafe in 2009, the first specialty coffee shop in Athens by most local accounts. The business grew out from that single room into a full roastery on the Athens Lamia national road, the shift from traditional to specialty coffee happening gradually rather than all at once.

The Exarchia room still carries the weight of being first, a reference point for the baristas and roasters who came up through the Athens scene afterward. Retail bags line the counter for anyone wanting to take a bag of the house roast home, alongside the standard espresso and filter menu.
