Adonis and Lavros, both veterans of Evergreen Coffee, often credited as Greece's first specialty coffee company, opened Kaya at the back of a small shopping arcade near Syntagma. There's no seating inside at all, a rarity even by European standards, just a hatch to order at and a long wooden bar out front to lean on while the baristas work.

Five grinders run through a rotating lineup that includes the house blend of Guatemalan, Brazilian, and Colombian beans alongside single origin guest roasts from names like Red and Mind the Cup. The lack of seating keeps turnover fast and the crowd standing, watching the pour as much as drinking it.
