Kobe and Femke turned a shared passion for coffee into Kolonel Koffie in 2012, Kobe bringing barista training picked up in Sydney and Femke a background in social work rather than hospitality. The shop started in Antwerp's historic center before relocating to the fashionable Het Zuid neighborhood in 2015, a move that put it among the galleries and boutiques the district is known for.

Since 2016 the pair have roasted their own beans through a micro roastery built into the operation, taking the shop from a straightforward espresso bar into a fuller specialty coffee business. Kitchen service runs until early afternoon on weekends, keeping brunch and lunch options available alongside the coffee menu.
