Claye Tobin from Australia, Nina Tromp from the Netherlands and Josh Cotton from the UK founded Uncommon in 2018, building a roastery around direct relationships with producers and a green coffee book that runs eighty to ninety percent organic certified or Rainforest Alliance equivalent. A sister location, Uncommon Bar, opened across the street at the end of 2024, developed with Instil Collective around the psychology of staying connected to where a cup actually comes from.

Cards are accepted and gluten free options sit alongside the standard menu, though the Bar location runs deliberately wifi free, a house rule built to keep laptops off the tables. Dog owners are common among the regulars, drawn in part by the short walk from Vondelpark.
