Casey Kooyman trained as a barista in California, working Starbucks in New York for over two decades before moving to Amsterdam in 2017, running a mobile stand at Dappermarkt and pop ups out of a garage before taking over this Zeedijk lease. Rather than roast his own beans, Morning Owl works as a curated showcase, brewing and retailing lots from some of the city's strongest roasters, DAK, Friedhats, Uncommon and Rum Baba among them, a genuinely different model from any other shop on this list.

There is no indoor seating, just a takeaway window on the edge of De Wallen, and the menu runs past straight coffee into a homemade coconut and cashew horchata and Southern inspired pastries, brewed with the help of a Decent Espresso machine for the matcha too.
