Opened in early 2013 by Australian Adam Craig, previously of Culture Espresso in New York, Lot Sixty One built its identity on the line 'born in Sydney, raised in Brooklyn, roasting in Amsterdam,' a fair summary of the post industrial, small format roastery cafe hybrid it has run ever since. Beans are roasted on site on a 12-kilogram Probat, sold by the bag alongside capsules and a subscription program.

The brand has expanded since, with a kiosk now inside Amsterdam Centraal Station and reported outposts in The Hague and Malta, but the Kinkerstraat original in Oud-West remains the flagship roastery. Outdoor seating out front is dog friendly. A compact, functional room built more for people who already know what they want than for lingering over a laptop.
