Hummingbird Coffee Amsterdam

Hummingbird has partnered with the American roaster Onyx Coffee Lab as its house supplier since early 2021, pouring an exclusive Onyx Hummingbird Blend as the anchor of a menu built around variety rather than a single signature roast. On top of that anchor, a guest roaster rotates in every month, so the two or three coffees of the moment might come from Sweden's Swerl or a small outfit like KB Coffee Roasters, chosen and tasted first by the shop's own baristas before they go on the board.

Every bag sold in the small Spuistraat storefront, close to Dam Square, is also served by the cup, so visitors can taste a coffee before committing to buy it whole for home brewing. The shop also stocks ceremonial matcha and ceramics from Michi alongside the coffee, with outdoor seats out front for people who want to linger over whichever blend is on rotation that week.
