Stiller's Coffee

Søren Stiller Markussen, a Danish barista champion in both 2008 and 2010 and a World Barista Championship finalist the same year, runs this combined roastery, lab, and coffee shop out of a back alley building that once housed a chocolate factory. Rough brick and industrial fittings from the old factory are left mostly untouched, giving the space a workshop feel closer to a roasting floor than a cafe.

Markussen sources direct from producers and hand brews through Chemex, V60, or siphon depending on the bean, running the counter on his own terms rather than customizing to order, sugar included. The shop traded its former name, Great Coffee, for Stiller's own after years of building a reputation as one of the more exacting rooms in the Latin Quarter.
