The team behind Copenhagen's long running Café Europa 1989 launched this Frederiksbjerg roastery in 2019, carrying more than seventy years of family coffee experience into a single site that roasts on the premises. A Loring Kestrel works behind soundproof glass a meter from the tables, letting anyone with a coffee watch the batch running while baristas talk through each brew method at the counter.

Pastries come from Berta, a Frederiksbjerg bakery, rounding out a menu built to keep the focus on the roaster rather than a wide food program. The soundproofing is a practical touch as much as a showroom one, keeping the Kestrel's noise out of the seating area while the glass keeps the process visible.
