Behag Din Smag has occupied its spot on Gabels Torv, a small square tucked into the heart of Aalborg, since Lene Hyldahl turned an existing wine and delicatessen shop into a pure coffee bar in 2004. Jeppe Hasager joined the same year and has since competed in the Nordic Barista Cup and an Aeropress championship, traveling to Nicaragua, Costa Rica, and Kenya to see the coffee at its source.

The bar works with a tight, fully traceable selection of green beans, roasted to profiles the team sets itself, and leans organic wherever it can, right down to the flour in the sourdough buns baked fresh several times a day. Alongside the espresso and filter menu sits a cup of Valrhona hot chocolate and a wide shelf of organic teas, all served in a room built for lingering with a newspaper or a laptop rather than rushing through on the way somewhere else.
